THIS WEEK’S DISH

So remember when I teased a tiramisu chia pudding on stories? She's here! Creamy coffee chia pudding topped with softened honey cinnamon cookies and cocoa. It tastes like tiramisu, but it's packed with protein and only takes five minutes to throw together. You prep it the night before, and in the morning, it's just sitting in the fridge waiting for you. If you're a coffee lover, this one's definitely for you.

Tiramisu Chia Pudding

Serves 3-4

Ingredients

BASE

  • 2 cups milk of choice

  • 1–1½ tsp instant coffee

  • ½ cup chia seeds

  • ½ cup Greek yogurt

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • pinch sea salt

TOPPINGS

  • 12 Simple Mills Honey Cinnamon Sweet Thins

  • Cocoa powder

  • Extra Greek yogurt (or dairy-free - @cocojune is my favorite!)

Instructions

  1. Dissolve instant coffee in 1–2 tbsp hot water, then stir into the milk.

  2. Whisk together coffee milk, chia seeds, yogurt, maple syrup, vanilla, and salt; let sit 10 minutes, then whisk again.

  3. Divide into jars, top with broken cookies, and refrigerate for at least 4 hours or overnight.

  4. Before serving, dust with cocoa powder and add a spoonful of yogurt on top.

WHAT’S NEW

I'm not proud of it, but I'm the type of person who checks their email and Slack before they've even gotten out of bed... I know it's so bad for me (hello cortisol spike), but it's become such a terrible habit that's been tough to break. The best trick has been leaving my phone in the bathroom so when the alarm goes off, I'm forced to get up, and now I actually have time to work out every day again! I'm only a week in, but I already feel SO much better. I've also been prepping breakfast the night before, so that's one less thing to think about in the morning. This week's Tiramisu Chia Pudding has been my favorite to grab and go. Highly recommend if you're also trying to get your mornings together!
