THIS WEEK’S DISH

This one has been in my rotation forever and I'm so excited for you guys to try these Southwest-spiced egg muffins loaded with chicken sausage, veggies, manchego, and a ton of protein. It only takes like 5 minutes to prep and 20 minutes to bake a batch on Sunday and breakfast is done for the entire week. I usually pair them with avocado toast or throw a couple into a tortilla with avocado to switch it up. Pro tip: use a silicone muffin tray so the eggs pop right out - this one works great. They also freeze really well so you can have breakfast covered for months. There's literally nothing better than having breakfast ready to go on a busy morning.

Grab & Go Southwest Egg Muffins

Makes 12

Ingredients

  • 6 large eggs

  • 1 cup egg whites (or 6 egg whites)

  • 1 tbsp taco seasoning

  • 3-4 breakfast chicken sausage links, diced (we like Amylu!)

  • ½ cup shredded manchego cheese

  • 1 small zucchini, grated and squeezed dry

  • ½ small onion, diced

  • 1 bell pepper, diced

  • ½ cup tomato, diced

  • Avocado oil spray

Instructions

  1. Whisk the base: In a bowl or large measuring cup, crack in eggs and egg whites. Add taco seasoning and whisk until frothy.

  2. Assemble: Spray a muffin tin with avocado oil (silicone works best!). Evenly distribute the sausage and veggies between the 12 muffin cups. Pour the egg mixture over, filling to the top. Top with manchego.

  3. Bake: 350°F for 20–25 minutes, or until centers are just set.

Storage: 5 days in the fridge or up to 3 months in the freezer. Reheat in microwave or air fryer (325°F, 4–5 min).
