Peanut Butter Swirl Brownies

What’s better than a fudgy, peanut buttery brownie? One that’s also gluten-free, refined sugar-free, and pairs perfectly with a bold cab. 🍷✨

Ingredients
½ cup unsalted butter
¼ cup olive oil
¾ cup coconut sugar
3 large eggs
1 tsp vanilla extract
1 tsp instant coffee (optional)
2 Tbsp dark chocolate chips
1/4 cup dark chocolate chunks
¾ cup cocoa powder
½ cup almond flour
⅓ cup oat flour
½ tsp salt
¼ cup creamy peanut butter (slightly warmed)
Instructions
Brown the butter: Melt butter over medium heat until golden and nutty. Remove from heat and stir in olive oil, chocolate chips, coffee, and vanilla. Let cool slightly.
Whisk wet: Beat coconut sugar and eggs until frothy (2 minutes).
Mix dry: In a separate bowl, whisk cocoa powder, almond flour, oat flour, and salt.
Combine wet ingredients: Mix the browned butter mixture, into the egg mixture until smooth.
Combine: Gradually fold the dry ingredients into the wet mixture until just combined. Stir in chocolate chunks. Avoid over-mixing.
Prepare batter: Pour batter into the pan, spreading it evenly. Add dollops of peanut butter on top and swirl it into the batter with a knife.
Bake: Bake for 18 minutes or until the edges are set and a toothpick comes out with a few moist crumbs. Careful not to overbake!
Cool and enjoy: Let them set for 5 minutes, cut, and enjoy while warm!
